I love the description on the menu: “Snowy white ox-bone soup with white rice and white noodles. Carefully chosen bone and meat are cooked together more than 12 hours in a giant cast-iron pot to remove the fat and oil. Add scallion, salt.” That’s pretty much it. Gammiok specializes in sulung tang, which is a meal in itself for one person, at only $6.95 ($7.95 for take-out). Best of all, the restaurant is open 24 hours a day, seven days a week. Ah, reminds me of my college days, when Gammiok was the place to go after a night of drinking, as the sulung tang really hit the spot at 4am. But really, any time of day, this comfort food is a good bet to satiate a soupy noodle craving.

Mee Goreng (Indian-style stir-fried egg noodles with shrimp, tofu and bean sprouts)

I’m a big fan of egg noodles, as long as they are cooked just right so that they’re still springy. These Indian-style stir-fried egg noodles include shrimp, egg, tomato, tofu, bean sprouts and some greens with a peanut sauce. A dash of lime juice all over livens them up even more.

Ramen (toroniku)

Did I mention I love fat? As a little girl, I preferred fat to lean meat. I liked the taste, and I was also told by who knows who that it gives you good, smooth skin. Anyway, toroniku is slow-cooked stewed pork with layers of fat. Because it’s slow-cooked, technically, the fat should no longer be that fatty, but still tasty. The toroniku ramen is one of the richest ramens I’ve ever tasted. The pieces of cabbage added on top are an interesting touch and add a tad of levity to an otherwise seriously heavy meal.

Only available during lunch on Friday and dinner on Saturday, the ramen at Chikubu is worth lining up for. The noodles are springy, the roast pork is tender and juicy, the scallions are finely chopped in long strips to enhance flavor and the soup is delicious. Need I say more?
