I’m a big fan of egg noodles, as long as they are cooked just right so that they’re still springy. These Indian-style stir-fried egg noodles include shrimp, egg, tomato, tofu, bean sprouts and some greens with a peanut sauce. A dash of lime juice all over livens them up even more.
