Gujeaolpan is a Korean royal platter consisting of nine items. In the center of the platter is a stack of thinly sliced, vinegar-soaked radish that acts as a pancake/wrap on which you add a combination of the other eight ingredients: marinated zucchini, radish, carrot, oyster mushrooms, cooked eggwhite pancake, cooked eggyolk pancake, kalbi (short ribs) and shrimp. All the ingredients are thinly shredded, so they fit on the delicate radish wrap. It’s DIY Korean hors d’ouevres, and, though they seem small, after eating a couple, I start to fill up. It’s fun, elegant and strikes a good balance with the other spicy dishes.
