Sobakoh takes its food seriously and treats the presentation and preparation of each ingredient respectfully. The daikon salad uses long, perfect slices of radish, the size and thickness of a wide linguine, with a tasty yuzu wasabi dressing and is topped with bonito flakes and some greens for garnish. The size and thickness of the radish are extremely important in creating just the right crunch and mouth feel. After finishing this appetizer, you feel as though your entire palate has been cleansed and are ready for some delicious soba!
