Ice cream sandwiches are summer’s cookies and Joyce Bakeshop in Prospect Heights knows how to do them right. A thick layer of espresso ice cream is sandwiched between two of Joyce’s chocolate pecan cloud cookies for an enormous hunk of indulgence. The ice cream, which is made on site, is subtle in flavor, so the real treat is the cookie. The double chocolate chip cookie with traces of pecans stays chewy even after spending time in the freezer. So after the ice cream melts in your mouth, the dark chocolate chips become a mass of chewy fudge. You could easily share this bad boy with a friend, but what for? These sandwiches give you an excuse to indulge in the summer just a little bit longer.

The Belgian bakery-café chain Le Pain Quotidien seems to be continuously opening new stores around the globe, with thirteen locations in New York City alone. In my book, LPQ’s speculoos cookies — Belgian spice cookies — are reason enough for world domination. I love these smooth, flat cookies with sliced almonds because the subtle hint of cinnamon and fresh lemon linger on your palate long after the cookies are gone. The texture of the cookie is hard but refined as it’s made with pastry flour. Each bite starts with a light, crisp crunch, and ends with your hand reaching for another.

Amai Tea Sweets are my latest sweet addiction — which doesn’t happen often, as I don’t have a sweet tooth. These cookies are made from all-natural ingredients, including high quality teas and spices, which is why they taste so fresh and delightful. The green tea and chai almond are two of my favorite flavors. While butter cookies can lean towards being a little heavy, Amai Tea Sweets are subtle in flavor and crumbly in texture, making for a light snack. Everything about these treats is just right, from the size of the cookies, the subtle flavors, and the beautiful hand-cut shapes to the packaging.
