Turnover (Bajan style)

This turnover is actually what I would describe as a loaf of coconut bread, except that Cock’s sells another version of coconut bread, which is also D-E-L-C-I-O-U-S, though the dough is thicker, harder and has more texture than the turnover. In the middle of the soft, fluffy bread is a coconut, sugar and cinnamon filling that defines the word “yum!” The trick is, these Bajan style turnovers are hidden, whereas the American style turnovers – a triangular pastry with fruit filling — are displayed in the bakery’s glass cases in plain view. So don’t forget to specify that you want the type that the native Barbadians eat.
