The annual Holland Herring Festival starts tomorrow at Grand Central Oyster Bar after the nieuwe maatjes herring is air-expressed to the Oyster Bar from its North Sea home of Scheveningen, Holland.
Chef Sandy Ingber will be serving the herring filets individually with crumbled hard boiled egg, sweet onion, and chives, or in a salad.
I attended my first Herring Festival last year and fell in love with the succulent and fatty herring filet paired with crumbled egg — an absolute delight! The plump and delicious Dutch herring is available for only 17 days through June 24.
This year, I will be trying mine with a Dutch Martini — Ketel One vodka and Bols Genever gin!
