This Baking Friday is open to participants living in all 50 states in the U.S. (Baking Fridays take place on Thursdays during the summer months.)

It was only a couple of years ago that I learned about speculoos, the delicious Belgian spice cookies, and I only grow founder of them as the years go by. But imagine my surprise when I learned that Borne Confections (formerly Pierre Marcolini — they still sell Pierre Marcolini chocolates but also offer other luxury confections) carries Belgium’s premiere biscuit house, Dandoy. Dandoy Biscuits has been around since 1829 and it is still family-owned. Over six generations, the Dandoy family has perfected its biscuit (or cookies as we call them in the U.S.) recipes to produce the finest and most elegantly delicious biscuits.

While they do make speculoos, my favorite is the pain d’amandes. These spiced buttery crisps are derived from the speculoos biscuit and mixed with roasted and crunched fresh almonds — just heavenly.

In addition to the classic biscuits, Dandoy also produces a variety of decadent specialty biscuits, including palet de dames and sable citron. They’re the perfect treat with tea or coffee, or a luxurious gift to offer someone special.

Thank you, Borne Confections, for this week’s Baking Friday contribution!
